This paper deals with the evolution of the Newfoundland fireplace and with the earliest forms of cooking and heating technology as well as with the interaction of available technology and actual practice in Newfoundland in the nineteenth century. Résumé Cet article porte sur l'évolution du foyer à Terre-Neuve, sur les premières techniques de cuisson et de chauffage ainsi que sur les liens entre les techniques existantes et celles qu'on employait effectivement dans cette colonie au XIXe siècle.
